I took a dessert to a lunch in the home of one of my friends this week. We had a great time catching up on what was going on in each of our lives. Almost all of us have retired now…just one of the group is still working and will retire at the end of next month. We did exchange some work stories, some travel stories, lots of family stories and a few challenging health stories. All together it was nice to be among friends.
I looked for recipes for a nice dessert to take for the lunch. I decided on a recipe from Epicurious: Cranberry Swirl Cheesecake with Cranberry Raspberry Compote. It was great!
This is the cheesecake before slicing and putting some compote on the side. It had just enough cranberry flavor without being overpoweringly fruity. The swirl adds a nice touch, don’t you think?
The compote was sweet and tart. A nice addition to the cheesecake. I would show you a picture of the two together but I was too busy eating to take a picture. Definitely a recipe I will make again when I want a splurge dessert!
Tomorrow, for Christmas, we are having homemade vanilla ice cream with the leftover compote as a topping. Yum.
