We planted too many cucumbers this year AND the weather has been a bit cooler and wetter than usual for July so we have been harvesting 4 or 5 cucumbers every day. For two people, that is a mountain of cucumbers. For this reason I have been trying many new cucumber recipes.
In the past few days, we have had old fashioned Fire and Ice (cucumbers and onions in a vinegar/water/sugar brine), cucumbers and onions in sour cream, cucumbers and tomatoes with balsalmic vinegar dressing, kimchi cucumbers, and yesterday, Tabbouleh. I expect to look in the mirror and see a slight green cast at any time!
I have canned pickles in the past but we are not huge pickle eaters so I am not sure whether I will can more pickles this year. We still have a supply in the root cellar.
