Tempeh Triumph

The day started out stormy and so there would be no yardwork today.  I did venture out between rains to get some rhubarb from the garden.

On the way to the garden, I passed our Chinese Dogwood, just beginning to blossom...

Then onto the rhubarb patch. The rhubarb is huge this year!

Just one stem…

The stem is 2 inches across!

The plan is to stew some rhubarb for dessert since The Bearded One has expressed a wish for stewed rhubarb over Rhubarb Cake or Rhubarb Pie.

In the meantime, it is a vegetarian day.  We had Vegan Sushi.  We love sushi but we are in Ohio so sushi is sketchy at best.  We do have a grocery in the area that does good fish sushi but doing it at home is difficult  and pricey.  This vegan sushi recipe from Veganomicon (the ccokbook I received for Mother’s Day) was great.  We both love it!

One filled with a spinach mixture, one with carrot, cucumber, scallion, and one with a spiced tempeh.  Hey!  The tempeh was great!

We could not finish the three sushi rolls between the two of us.  A recipe definitely to be repeated.  Who would have thought?

The stewed rhubarb is waiting for dessert…maybe alone…maybe on no sugar ice cream.  Maybe we are still too full to even try it…

    I am jealous of your rhubarb! Mine is so scraggly. It’s like the rhubarb Ren to your rhubarb Stimpy.
