Fire Roasted Tomatoes

I finished stacking the firewood yesterday (pictures of the stacks to come) and cleaned up the piles of bark and assorted detritus today (ten wheelbarrows worth).  I hope the next time we have firewood delivered will not be until the summer of 2011 and they do not load it with power equipment that picks up all the bark, dirt and pop cans that exist in the area.)

We canned more tomato sauce today, again using the Vitamix to pulverize the skins, seeds and pulp of the tomato into a thick juice.  All that was needed then was to cook it down into a sauce.  Easy Peasy.

I also roasted some tomatoes to freeze as Fire Roasted Tomatoes.  This is a first for me but my sister swears by Fire Roasted Tomatoes.  I used paste tomatoes and roasted them for 30 minutes in a 450 degree oven with some garlic cloves and herbs from the garden.  Then, into freezer bags they went.  Hopefully, yum.

    I am going to come raid your freezer. I bet those will be delicious!

    Easier to roast them on parchment paper (Ottolenghi), then roll them up after it cools so you dont loose any sauce.
