Vegetarian Onion Soup. This was good. Really good. The Bearded One had three servings and he rarely takes seconds. Adapted from Mark Bittman’s How to Cook Everything Vegetarian.
It was made with a Roasted Vegetable Stock. Also, yummm. I mean yummm.
We had slices of french bread, toasted then coated with grated Parmesan on top. Could life get any better?
The french bread was so good that I had four slices for lunch today and The Bearded One had a similar amount.
