Running as Fast as I Can

Preparing for a visit with the Grandsons.  So much to do to get the garden put to be and the harvested produce put to good use.  I preserved eggplant in olive oil (a new recipe…not sure how it will turn out), I froze various peppers, and I decided to make pasta sauce with the last of the tomatoes.   After washing clothes, shopping for last minute needs, and packing for me and the cat, I decided to make Lazy Woman pasta sauce.  This means cleaning and trimming tomatoes then putting them through the Vitamix (skins and seeds included).  Add the result to garlic sauteed in olive oil and a bit of crushed red pepper then simmer for hours until it is thick enough.  Can.

Phew.  Almost done.

VeeGee will be left alone while we are gone.  I am sure she will prefer that to being shoved in a cat carrier each day.  While we are gone, we are leaving her food in the large cat carrier so she will get used to being in there on her own terms.  A few days after we return, she will need to return to the vet in the cat carrier to be spayed (don’t tell her though).
