It has been cold and somewhat snowy here this week. It seemed a good day for comfort food. What better than Noodles and Mashed Potatoes. Now, for those of outside of the Ohio/Pennsylvania Amish area, this may seem an odd combination. But, believe me all you carb lovers, there is nothing better! Basically, it is Chicken and Noodles (or Beef and Noodles, or Vegetables and Noodles) on mashed potatoes. Stop! I can hear you skepticism. I have experienced it when I introduce this dish to friends and spouses (another story). But never, once introduced, has anyone failed to LOVE this dish!
First, make homemade egg noodles or buy the dried or frozen Amish style egg noodles from the grocery.
Then make mashed potatoes while preparing the noodle concoction.
For the noodles, saute chopped onion and carrot in a bit of butter for a few minutes then add chicken broth (I use my homemade broth. Tonight it was broth from the smoked turkey we had at Thanksgiving.) Add cooked chicken or turkey bits cut into pieces. Simmer until carrots are almost soft…about 30 minutes. Add the noodles and cook until done. Add a Tablespoon of cornstarch stirred into 1 Tablespoon of water to the simmering broth to thicken it a bit.

I now need to figure out what I am going to do with background on both horse pictures… Hopefully, I will not ruin them at this point.
