Hot Dogs and “Homemade” Baked Beans

Okay.  We try to minimize our meat consumption AND I do not really like hot dogs.  (Again, as I have said before, blame my older sister and her portrayal of the likeness of a hot dog.)  But, The Bearded One likes them and, when asked what he was hungry for, asked for them.

I bought Oscar Myer Premium All Beef Hot Dogs.  They are nitrate and nitrite free and sound less iffy than many others.  At least let me pretend.  I found the one I ate to be quite good which is high praise.  The Bearded One ate two…which again is high praise since his appetite is generally that of a teenage girl with diet issues!  I grilled them in the stovetop grill pan and made some baked beans using what was around.  They were very tasty.

Baked Beans from “Scratch”

1/2 green pepper, diced

1/4 medium onion, diced

Saute in a bit of olive oil.


1 can of drained and rinsed white beans

some BBQ sauce and some chili sauce (enough to make the mixture wet and red enough)

Stir together then put a piece of bacon (cut into large pieces) on top.  This is probably optional if you are sticking to a vegetarian diet but tastes yummy if not.

Bake in 350 degree oven for 90 minutes.


It was a beautiful day in the Florida Panhandle.  Probably one of the nicest we have experienced here this January.  It is supposed to be even warmer this weekend.  We are enjoying the sun and the water.  I am not looking forward to heading north in 10 days!

Allie slipped out the door today.  The neighbor helped us catch her by letting us know when she changed directions on the run.  Later in the day, we searched for her in the trailer…checking everyplace we could think of at least twice…the started a search of the campground only to find her looking out the screen door when we returned.  Sigh.  I do not know if she has found an incredibly good hiding place or has developed a “cloak of invisibility”….either is frightening.
