Celery Soup

The Bearded One introduced me to Cream of Celery soup some time ago.  As in Campbell’s.  It is okay.  He kinda likes it.  I like it as an ingredient in casseroles.  He does not like casseroles.  End of story.


He came across a section of The Vegetable Book that reflected that some people had only experience “tinned Celery Soup”.  Psshaw.  Oh, wait, that is us.

It gave a recipe for Celery Soup and I made it today.  Hello!  Yum!

CELERY SOUP (I divided this by thirds for the two of us and we ate it all.)

2 heads of celery, trimmed

1 oz. butter

1/2 t white pepper

1.2 t celery salt

3 pt. vegetable stock

1/2 pt. half and half

2-3 T chopped fresh cilantro

Wash the celery thoroughly, cutting off and throwing away all damaged parts, then slice the rest across.  Melt the butter in a large pan and sweat the celery with the pepper and celery salt.

Add the stock and simmer for 20 minutes, leave to cool and then blend.  There should be no fibers if only the inner stems have been used and it has been cooked enough.  But if there are, put the soup through a coarse sieve.

Reheat gently, adding the half-and-half, then sprinkle the chopped cilantro on the surface of the soup before serving.

I have not been working on the colored pencil painting.  Physically.  Mentally, I have been pondering what to do with the background.

I think I have decided on a very dark background.  Not solid black but something very dark…perhaps fading into midtones as her fur fades into lightness in the foreground.

We will see what happens.
