What a Beautiful St. Patrick’s Day!

The weather was GORGEOUS today.  Sunny with temperatures in the mid 60’s.  Beautiful!

I worked a bit in the gardens, cutting back the asparagus bed so new sprouts can be seen when they appear in the next few weeks…


It doesn't look like much now...but soon...Asparagus.

We traveled to the Grand Canyon last April and missed the asparagus season so we are really looking forward to the crop this year!

I also pruned the raspberry patch.  Not pretty, but just wait a few months.

Ah.  Spring.

We celebrated St. Patrick’s Day with Colcannon for dinner.

How could anything with mashed potatoes as the main ingredient be anything less than Yum!  I did add a bit of bacon this time but that is optional.  I only put two slices into the recipe so it did not add a major amount to the dish, it could easily be made without to be more vegetarian…however, leaving out the butter might be a problem…
