Raspberry Jam

Image via Wikipedia

We have a good crop of raspberries this year.  I have made two batches of raspberry jam.  It is VERY easy.

Take clean raspberries, measure the quantity and put them in a larger saucepan than you think you will need. (When boiling the jam doubles in size.)

Bring the raspberries to a rolling boil, mashing them with a potato masher while they heat.  Boil for 2 minutes.

Add an equivalent amount of sugar (I put in slightly less), stir well and bring this mixture to a boil and boil for 2 more minutes.

Allow to cool a bit then pour into sterilized jars.
