Oh, come on. This can’t possibly work. Tuna salad that tastes good without tuna??? Yep. It works.
I received the recommendation for this recipe from my eldest daughter who is now Vegetarian and gluten and dairy-free. She is not eating this way in a holier than thou manner, she has just found that the extreme joint pain and swelling that was diagnosed as quite significant rheumatoid arthritis before is completely gone when she eats this way! No more expensive drugs with scarey side effects to manage the problem (and she still had pain at times while on those drugs)!
Anyway, since we have been eating more vegetarian meals for some time, I decided to try this recipe. I did not tell The Bearded One that the tuna salad did not have tuna in it. He happily ate his sandwich and said it was good. It was only then that I told him my secret. Woohoo!

We have been busy for the past few days with a welcome visit from my younger sister and her husband. It was a quiet time together (we specialize in quiet around here) but we enjoyed our time with them. They have returned to their busy lives in Texas and we are once again spending much of our time relaxing at the lake.
It is a tough life.
