First, Roast Beef. We are traveling in our truck camper and had stocked up on grass fed organic meat before leaving home. Our freezer was full to bursting.
We try not to eat beef or pork for dinner more than once a week and when we do we try to make it as healthy as possible. Thus the freezer bursting with good meat.
We think this meat tastes much better. Granted, it may just be in our heads, but heads count. This time, I was looking for a use for a boneless chuck roast. This is the recipe we tried: from Food Network Pot Roast with Mushroom Gravy.
I used button mushrooms instead of cremini because that was what I had. I used beef boullion because I cannot easily carry cans of broth in the camper. Still the result was delicious! Heartily recommend it.
Tonight, we had homemade pizza. I tried a new recipe for the crust and loved the recipe. It is not whole wheat and I do make a good whole wheat pizza. But this is a great crust that tastes better than restaurant pizzas!
It was a vegetarian night so our toppings were homemade tomato sauce, red bell pepper, onion, black olive, sliced mushrooms, mozzarella and parmesan. Delicious.
