French Bread

3 1/2 c bread flour

1 t salt

1 1/2 t instant yeast

Put the flour in a food processor, add the salt and yeast, and turn the machine on.  With the machine running , pour about a cup of water through the feed tube.  Process until the dough forms a ball, adding a little water at a time until it becomes smooth.  The whole process should take about 30 seconds.

Knead briefly by hand until you have a smooth ball of dough.  Put the dough into a bowl sprayed with oil.  Cover and let rise for 1 -2 hours, depending on the temperature of the room.

Sprinkle the counter with flour and shape the dough into the desired shape.  Cover and let rise another 1-2 hours until at least doubled. Preheat the oven to 400 or more (the hotter the oven the crustier the bread will be).

Slash the top of the dough.  Bake about 25 minutes, until it is golden brown and internal temperature is 210.
