Melt-in-your-Mouth Sausages

This recipe was recommended to me by my daughter, Kate.  It is from the Cookbook “Fix It and Forget It Diabetic Cookbook”.  Although not diabetic, but working to avoid it, this recipe is very good.  A slow cooker recipe and helps to avoid those tough gristly sausages that sometimes result from quicker ways of preparation.  (Although this recipe originally called for turkey italian sausage, I have made it with pork and chicken sausage.)

1 3/4 lbs. sweet turkey Italian sausage, cut into 5″ lengths (I use spicy italian sausage since we like spicy)

48 oz. jar fat-free, low sodium pasta sauce

6 oz. no-added-salt tomato paste

1 large green pepper, thinly sliced

1 large onion, thinly sliced

1 T grated Parmesan cheese

1 t dried parsley or T T chopped fresh parsley

1 c water

Place sausage in skillet. Cover with water.  Simmer 10 minutes.  Drain.

Combine remaining ingredients in slow cooker.  Add sausage.

Cover.  Cook on Low 6 hours.

Cooked sauce and sausages

Serve in buns or cut sausage into bite-sized pieces and serve over cooked spaghetti.  Sprinkle with more Parmesan if you wish.

Melt-in-your-Mouth Sausages on homemade hard crusted rolls. Leftovers will be serve on pasta in a few days.
