Today, after months of eating okra in every imaginable fashion, I have invented a GREAT okra fritter recipe.
2 cup sliced okra
1/2 small yellow onion, diced
1/2 cup flour
1/2 t salt
1/4 t pepper
1/4 t cayenne pepper (more if you like spicy)
1 lg egg
1/4 c buttermilk
In a medium bowl, combine flour, salt and pepper. Add okra and onion and toss to coat. In a small bowl, whisk together egg and buttermilk. Add egg mixture to okra mixture and stir until combined.
Heat oil in a large skillet. Drop 2 Tablespoonful mounds of batter into oil. Fry until golden, flipping once. Drain fritters on rack over paper towels.
Makes about 12 fritters.
