Carol’s Gazpacho

3 large tomatoes, peeled and chopped

1 large green pepper, finely diced

1 cucumber, peeled and diced

1 clove garlic, soak in 3 T olive oil for one hour then discard garlic

1 T wine vinegar

1 T lemon juice

1 1/2 c chicken broth (when going vegetarian I just add water)

1 1/2 c tomato juice

1 thinly slice onion

1/2 t salt

1/2 t paprika

dash pepper

Soak garlic in olive oil.  Combine ingredients and chill for 4 hours or overnight.  Serve with croutons, chopped hard cooked eggs, crumbled bacon and slice almonds…or alone…it is great.
