Spicy Black Bean Burgers and Potato Salad

These recipes come from The Vegan Table by Colleen Patrick-Goudreau with some revisions by a non-vegan (me).

Spicy Black Bean Burgers (4

servings)

1/4 c flour

1/4 c coarse cornmeal

olive oil or canola oil for sauteing

1 yellow onion, diced

1 small hot or jalapeno pepper, minced (seeds removed, optional)

1 red bell pepper, diced

2 garlic cloves, minced

1/2 t dried oregano

2 c cooked or canned black beans drained and rinsed

1/2 c corn kernals

1/2 c bread crumbs

2 t chili powder

1/4 t cumin

1/2 t salt

2 T minced fresh parsley

white of 1 egg (my addition)

On a shallow plate, combine four and cornmeal and set aside for coating later.

In a saucepan over medium heat, heat oil and saute onion, hot and bell peppers, garlic, and oregano, until onion become translucent.  Set aside.

In a large-size bowl, mash black beans with a potato masher or fork. Stir in onion/pepper mixture, along with corn, bread crumbs, egg white, chili powder, cumin, salt and parsley.  Mix well.

Shape into patties.  Coat each with flour mixture.

Fry in a lightly oiled saute pan over medium heat for 5 to 10 minutes, or until browned on both sides. 

Potato Salad

8 medium creamy yellow potatoes, quartered (peeling optional)

1/2 c mayonnaise

4 scallions, finely chopped (I used chives since I didn’t have any green onions)

2 small carrots, peeled and finely chopped

2 T finely chopped fresh parsley

2 celery stalks, finely chopped

1 small red onion, finely chopped

1 T lemon juice

1 t salt

black pepper, to taste

Steam or boil potatoes until tender but not too soft.  Drain, cool, and cut into cubes.

In a large bowl, combine cooled potatoes with mayonnaise, scallions, carrots, parsley, celery, onion, lemon juice, and salt.  Add more mayonnaise, if necessary.  Season with pepper, and mix well.
